The relentless pursuit of the perfect meal to nourish body and mind has led the internationally trained chef Werner Absenger on an educational journey spanning many parts of the globe. Werner’s almost obsessive pursuit of his passion led from a culinary degree that he earned in Austria to a B.S. degree in Alternative Medicine from Everglades University in Boca Raton, Florida. Currently he is enrolled in the M.S. in Human Nutrition program at the University of Bridgeport in Connecticut and he hopes to climax this academic Iliad with a doctorate in Naturopathic Medicine or a PhD. in Human Nutrition.
He has lectured in places such as Michigan State University, New York Chiropractic College, and the Culinary Vegetable Institute in front of audiences such as Chiropractors, Oncological Nurses, and LPN’s. In seminars he draws from his diverse academic background to educate about the worldwide issue of human nutrition based on sound, yet sometimes controversial science, whether it is the Western, reductionist “Man is a Machine” view, or the more holistic whole person approach of ancient nutritional practices described in Ayurvedic texts (ca. 1,200 BCE) and the Yellow Emperor’s Classic (ca. 206 BCE). It is this very unique, multi cultural perspective that allows Werner to approach nutritional issues from an integrative, three-dimensional realm. It is this very approach that he is offering now in intensive four week on-line classes.
